Last week Brickell got a new sushi spot: Nikko by Sunshine.The 50-seat eatery is located inside the Solaris building located on Brickell Bay and is open Monday through Saturday from 11:30 a.m. to 10:30 p.m.
The man behind it all, owner and master chef Sunchai Naknoon, brings over 17 years of experience to his latest venture. Born in Bangkok, Thailand and trained by a Japanese chef, Sunchai (aka “Sunshine”) developed a passion for food and went on to helm the kitchens of several restaurants.
Before opening up Nikko, Sunchai was the master chef at China Grill, the restaurants in the Fisher Island Club and the Sheraton Bal Harbour Beach Resort and he also owned and operated a Fort Lauderdale based sushi bar inside the Hilton Hotels & Resorts.
A press release informs that Nikko “boasts Asian modern cuisine in a swank setting” and that the chef “adds his own modern twist tosushi, sashimi, curries and noodles, pushing the traditional boundaries of Japanese, Chinese and Thai gastronomy”. His specialty menu includes dishes such as the Rattlesnake Roll, Soft Shell Crabs, Kangaroo Curry and Ostrich Basel.
