Richard Hales is opening Bird & Bone at The Wynwood Yard sometime this April, where he wil serve “American Southern eat with-your-hands favorites with an innovative Asian twist.” The focal point of his menu will be his own spin on the Nashvillian classic, hot chicken, and ribs at different levels of heat. “Richard Hales’ is adding to his roster of restaurants later this month when he debuts Bird & Bone in Wynwood Yard. Taking over his Dim Ssäm à gogo truck later this month it will feature “American Southern eat-with-your-hands” grub with a “innovative Asian twist.” On the menu expect plenty of chicken and rib offerings available in five different heat levels including Nashville Hot and Numbing and Hell Fire, Florida fish toast made with local fish and Zak the Baker bread, pimento mac-n-cheese and two desserts created by Hales’ wife, banana pudding and goo cookies. This new concept is one of many new food outposts in the space arriving in the past month like Ash by Stanzione 87 offering Neapolitan pizzas and shaved ice-cream truck Mr. Bing.” written by Olee Fowler.

“Bird & Bone will set up shop in the next few weeks for spring and summer. Hales’ Dim Ssäm à Gogo truck has been at the Wynwood Yard since January, and the chef thinks it’s time to try a different concept. The truck is undergoing a transformation into Bird & Bone, being outfitted with a new façade that will make it look more like a structure than a vehicle. “We signed a three-month lease to do Bird & Bone,” Hales says. “If it does well, we’ll renew and possibly then look for a brick-and-mortar spot.
