The Josper Grill is certainly having its moment in the sun in Miami right now. Dozens of restaurants are using the Spanish grill — that burns 100 percent charcoal and can reach temperatures of 800º Fahrenheit — to char various proteins and veggies, but none is celebrating it more than the newly opened Arson (104 NE 2nd Avenue, Miami, FL 33132), which quietly debuted in Downtown late last month. For this latest venture they veered away from their trademark Spanish cooking to more rustic dishes where the ingredients (and the Smokey flavors) shine.
