15 Steps, Farm-to-Fork Dining in Miami Beach

15 Steps, a farm-to-fork restaurant will officially open at the Eden Roc Miami Beach on December 1, replacing the lauded 1500 Degrees that also featured locavore cuisine.

 

The restaurant, which is named after the “15 steps necessary to grow a vegetable, catch a fish, or cook the perfect steak”, will showcase local produce and proteins, and will feature vegetables and herbs grown at the resort’s own sea spray organic garden.

 

Bounties from the property’s private garden include rosemary, sage, mint, basil, heirloom tomatoes, spinach, Brussels sprouts, kale, and celery.

 

The menu, helmed by executive chef Mark Henry and signature chef Jeremy Ford, will rotate seasonally, with month-to-month specials focusing on sustainability and regional produce.

Chef Ford was the chef de cuisine at 3030 Ocean and corporate chef for Dean James Max in Fort Lauderdale.

 

The new executive chef at 3030 Ocean is Paula DaSilva, who led the kitchen at 1500 Degrees.DaSilva left 1500 Degrees this past July. The restaurant officially closed Oct. 14, but continued dining service during the transition.
